Many of our students ask us for advice on what is the next step to further their wellness life style.First really apply what you have just learned. Work to replace all the condiments in your home with lacto-fermented versions. We are talking about the ketchup, mayonnaise, pickles, relishes, salsas, dips, etc. Just think about it, you will be replacing these commonly used items with ones that have all the benefits we mentioned earlier. But it does not stop there. You will be avoiding the all the chemical preservatives, artificial flavorings, colorings, and added sugars. Just those changes alone can make a difference overtime. Add in other types of fermented foods to your diet.Next we would suggest looking at the breads in your diet. Commercially produced bread has many additives, preservatives, and extra sugars, not to mention that research is showing, rapid rise yeast is an issue. Great news is you don’t have to give up the bread. How about a homemade method of making bread and baked goods that is easy to do, plus it has benefits very similar to lacto-fermenting. Like releasing the nutrition of grains, lowering gluten greatly, and neutralizing anti-digestive agents in grain. Today with the concerns of gluten in baked goods this is a great tool. What is this process? It is nothing new, it is called Sourdough. Sourdough is about the oldest form of leavening used in the world and it has many benefits. With the increased digestion of these items we have many students report, they eat half the bread they did in the past and get full. Some even report loosing weight. One great thing about sourdough is that you can choose to keep the "sour" taste out and just enjoy the benefits. With the sour avoided you can now make about any bread-type food you can think of. For example, cakes, muffins, pancakes, crackers, cinnamon rolls, etc. and of course the many types of breads.
