Newest Thing Out! Self Detoxifying Foods

Self Cleaning FoodsStep right up and get your self detoxifying foods. Yes, you heard me right! These foods will clean themselves of toxins before you eat them. They will lower levels of pesticides that they absorbed from being sprayed during growing. Sounds too good to be true? Heck, we don’t even use organic vegetables to lacto-ferment with all the time. Does that sound risky? Let me pull back the curtain and let you know why.

Plain and simple, the process of lacto-fermentation degrades these toxins. A study was done which examined the role of microorganisms in the degradation of the organophosphorus (OP) insecticide chlorpyrifos (CP) during Kimchi fermentation. That is exciting, right? Well maybe not unless you know what organophosphorus (OP) insecticide chlorpyrifos (CP) is. Organophosphates are basic compounds of many common insecticides, herbicides, and nerve agents. Yep these are highly toxic according to the EPA to bees, wildlife, and us.

Bad stuff! Okay, I think we understand that.

What About These Self-Cleaning Foods?

Anyway, that study I mentioned earlier looked at how CP was degraded during the fermentation process of Kimchi. Why did they choose Kimchi? Well Koreans love Kimchi! And guess where the study was done… Korea, where Kimchi is a staple of many meals. Kimchi is just spicy sauerkraut. It was found that by day 3 of the fermentation process CP had reduced by over 80%, and by day 9 it was completely degraded from the ferment. That is super news, since we can’t always know that our foods have not been sprayed with pesticides.

It was found that the lactic acid bacteria, which does such a great job of preserving the foods during the lacto-fermentation process, was responsible for this great result. And the test results did not stop there! Other common compounds used in insecticides and herbicides; Coumaphos (CM), diazinon (DZ), parathion (PT), and methylparathion (MPT), were also degraded.

More Than Just Pro-biotic Rich.

I know so far all of this has been heavy in scientific wording, but realize that fermenting does more than just give us pro-biotic rich foods. It is removing toxins from the foods before we eat them. While the study was done on Kimchi, it was pointed out that the lactic acid bacteria were responsible for these great results. The same lactic acid bacteria that are key to lacto-fermentation. Did you see that by day 3 over 80% of the CPs were removed? Most lacto-fermented vegetables take at least 3 days or more.

Yup, your pickles will be cleaner, your salsa will be cleaner, your sauerkraut will be cleaner… well I think you get the idea.

Fermented Foods Can Help Detox!

Don’t kid yourself. We are surrounded by toxic materials all day long. They are in the food we eat, the air we breath, and the water we drink. I have to tell you, I don’t mind my lacto-fermented foods lending a helping hand! And they do BIG time!

Lacto-fermented foods release the nutrition trapped deeply in the cells of the vegetables that are fermented, making them more available to the body. So your body gets nutrition dense food when you eat these fermented foods. Think of these foods as prepped and ready to digest. But, don’t get me wrong these foods are not a soft and mussy. Carrots still have crunch and so can your sauerkraut. Do you know what the body does when it has more energy it can use since it did not have to spend it on digestion? It detoxes itself if it needs to and then it operates better. It continues to become better, able to detox from these daily pollutants it encounters. WOW! This is like better x3!

Something else that is exciting to think about is not only does your body have more energy to detox as we just talked about, but it has more energy for healing, work, play, and whatever.
