Broiled Cheesy Sole *

This is a quick and easy way to cook fish. It’s so versatile, you can use most any white fish. Any way about it, it’s delicious……even the kids will love it.

  • 1 pound fresh Sole Fillets
  • 2 Tablespoons Lemon Juice
  • 1/2 cup grated raw Cheese (Parmesan, Cheddar, or any other favorite)
  • 1/4 cup butter (1/2 stick), melted
  • 1/4 cup homemade mayonnaise
    OR Vegenaise® made with Grapeseed Oil
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 4-6 lemon wedges, for garnish, optional
  • chopped fresh parsley, for garnish, optional

Place the sole fillets in a single layer on a large well-greased baking pan. Sprinkle the fillets with black pepper. Evenly pour melted butter over the fish, next pour the lemon juice on top. Let sit a few minutes while you work on the next step.

In a small bowl, mix together the cheese, mayonnaise, onion powder, and salt. Set the mixture aside.

Broil the sole fillets about 4-inches from the heat for 5-10 minutes, depending on the size of the fillets. (Fish will be opaque throughout and flake easily with a fork when done.)

Remove the fillets from the broiler and top each one with a little of the cheese mixture, dividing evenly between the fish. Spread the mixture out to evenly cover the tops. Return to the broiler for 1-2 minutes more, until the cheese is melted and lightly browned. Sprinkle with chopped fresh parsley and serve with lemon wedges on the side, if desired.

Serves 4 to 6.
